Role Overview Assist the Executive Chinese Chef in the efficient management of the Chinese restaurant kitchen. The Assistant Dim Sum Chef reports directly to the Executive Chinese Chef. Primary Responsibilities Work closely with the team on day‐to‐day operation. Innovate and create new dim sum dishes and presentations. Maintain total quality of food, ensuring checks on taste, temperature, portioning, and appearance. Produce food in volume matching demand to avoid over‐production or under‐production. Ensure incoming food is fresh, correctly weighed, and meets quality standards. Collaborate with the Executive Chinese Chef on menu development, pricing, and regular reviews. Maintain cleanliness, hygiene, and tidiness of the kitchen, ensuring compliance with NHA and HACCP standards. Control kitchen manpower and costs, ensuring operations stay within approved budgets. Train staff in culinary knowledge and implement proper hygiene practices. Foster staff retention and stability within the kitchen. Ensure kitchen equipment is well maintained, serviced, and safe for use. Contribute to the catering business by delivering high‐quality food at competitive prices. Undertake any additional tasks assigned by the Executive Chinese Chef. Qualifications & Profile Sound product knowledge of Cantonese and Sichuan cuisine. Excellent people‐management skills and ability to build positive relationships. Strong operational presence and self‐starter motivation. Minimum 5 years experience in a similar role at an established hotel. Proficient in menu planning, event and catering setup, and recipe development. Integrity, organizational, and coordination skills. Strong knowledge of supplies, equipment, services ordering, and inventory control. Ability to read, understand, follow, and enforce safety procedures. High customer‐oriented focus and adaptability.
