Prepare and cook Cantonese-style barbecue and roast meats, such as char siu, siu yok, androast goose.b. Ensure consistent quality and presentation of dishes.2. Meat Preparation:a. Select, trim, and marinate meats according to recipe requirements.b. Skewer and hang meats for roasting or barbecuing.3. Cooking Techniques:a. Master various cooking techniques, such as roasting, grilling, and steaming.b. Achieve perfect doneness and texture for each dish.4. Kitchen Management:a. Maintain a clean and organized kitchen environment.b. Manage inventory and supplies for the barbecue station.c. Assist with menu planning and development.5. Team Support:a. Collaborate with other kitchen staff to ensure efficient service.b. Train and mentor junior kitchen staff.要求: Requirements :1. 10+ years of experience advanced cooking techniques, including roasting, grilling, and steaming.2. Knowledge of Cantonese cuisine and barbecue cooking.3. Mentoring and training a kitchen team including junior Chefs.4. Ensuring food quality and presentation meet high standards.5. Ability to lift 25 kg (55 lbs) and stand for long periods.6. Maintaining kitchen hygiene and safety.7. Work in a fast-paced environment with high temperatures and humidity.8. Collaborating with restaurant management on healthy menu planning, inventory, and supply chainmanagement.9.
