Job Responsibilities Assist the Sous Chef and Head Chef with the preparation, cooking and presentation of produce, and run a section with the assistance of Commis Chef. Manage a section with the assistance of Commis Chefs. Prepare and cook food to the restaurant's specific standards. Develop and supervise the Commis Chef on section. Implement waste controls and manage section stock and rotation. Complete the kitchen cleaning schedule. Understand the functional administration of the restaurant (docket procedures, stations, table numbers, food labelling, etc.). Have detailed knowledge of the full menu. Work as part of a team, comply with legal requirements under the H&S Act 1974 and food hygiene, and adhere to all policies, procedures, standards, specifications, guidelines and training programs. Report maintenance issues to the relevant parties, and ensure all restaurant and menu standards are adhered to at all times. Produce food to the highest standards and restaurant specifications, keeping wastage to a minimum and using stock items in the correct order. Provide detailed description of all dishes, maintain health and safety documentation, and support Sous and Head Chef and colleagues to run a smooth and efficient section. Ensure tasks are completed in a timely manner and provide regular, consistent training, coaching and support to Commis chefs. Job Requirements Diploma or degree in Culinary Arts or related field, preferred. Minimum 5 years of experience in a full-flight kitchen, with at least 2 years in a similar capacity. Possess food hygiene and safety certification. Able to work rotating shifts, weekends & public holidays. Show a well‐groomed, professional appearance. Demonstrate full understanding of the role and carry it out in line with the job description. Work effectively with the rest of the team, prioritize tasks, manage time and resources effectively. Communicate clearly, professionally and concisely, actively listening and considering others' needs and opinions. Take the bigger picture into consideration and know when and where to seek guidance and clarity from senior members of the team.
