Role Description This is a full‐time, on‐site role in Singapore for an Executive Chinese Chef (or Chinese Culinary Consultant) focused on our cooked‐dish programme. The chef will: Create and refine Chinese dishes (e.g., roast duck, dong po pork, claypot/braise, wok‐fried veg/seafood, soups, noodles/rice). Maintain rigorous quality and consistency standards (taste, texture, temperature, plating). Train and mentor kitchen staff on technique (wok control/wok hei, braise reduction, stock/sauce foundations, roast preparation). Lead menu planning and engineering with attention to costing, yield, and contribution margin. Oversee ingredient sourcing and supplier relationships; set product specs for meats, aromatics, dried goods, sauces. Build and enforce kitchen SOPs (prep flow, station setup, batch standards, holding limits) for efficient operations and timely service. Uphold food safety and hygiene (SFA/HACCP‐style controls) and conduct regular line checks and tastings. Partner with management on seasonal items, limited runs, and photo‐ready plating for marketing. Qualifications Extensive experience in Chinese cuisine beyond dim sum—roast, braise, stock/soup. Proven track record in menu development and costing (yield management, portion control, GP% targets). Strong ingredient sourcing knowledge with established supplier networks and spec discipline. Ability to train and lead a multi‐station brigade; clear, hands‐on coaching style. Competence in building SOPs and improving kitchen throughput without losing quality. Solid understanding of food safety & hygiene (SFA requirements; HACCP principles). Collaborative, calm under pressure; comfortable in a fast‐paced, service‐driven environment. Formal culinary education or relevant certifications are beneficial. English required; Mandarin/Cantonese an advantage for supplier and staff communication.
