Job Title: Executive Kitchen Supervisor
The Executive Kitchen Supervisor oversees the preparation of breakfast, lunch, and dinner food items according to production requirements and quality standards while maintaining a safe, sanitary work environment.
Required Skills and Qualifications:
Passion for cuisine is a must. Attention to detail and strong work ethic are essential qualities in this role. The ability to supervise and train line cooks is crucial.
Responsibilities:
- In the absence of senior management, take full responsibility for running the kitchen.
- Assist in employment and retention of staff.
- Supervise commis chefs in the department.
- Assist in maintenance of company paperwork.
- Liaise effectively with other staff members.
- Ensure agreed standards of food service during shift.
- Supervise training of new staff members.
- Promote safe use of kitchen equipment and building under Health and Safety at Work acts, Hygiene and other regulations.
- Ensure relevant food controls and temperatures are logged and adhered to at all times.
- Ensure agreed standards of food preparation and presentation are adhered to at all times.
- Complete daily paperwork in accordance with company and government guidelines.
- Provide friendly, courteous, quick, efficient, and professional service at all times.
- Be aware of all relevant food suppliers and their products.
- Control wastage by maintaining correct stock levels and rotation from dry stores.
- Work effectively with other departments to ensure smooth and efficient service and production of food.
- Maintain constant quality control of all food prepared and cooked.
- Operate pass service of food from kitchen to restaurant.
- Provide clear handover during shift changes.
- Supervise and motivate team members.
- Report any problems or accidents to senior management.
- Confirm special requirements with senior management.
