Bakery Operations Leadership

The role of Head Baker requires a skilled and committed individual to lead and oversee daily bakery operations in a medium-sized bakery. This position combines hands-on production with strategic leadership responsibilities, driving business results through quality, taste, and presentation consistency.

Key Responsibilities

  • Lead and participate actively in the daily production of bakery items, ensuring efficient processes and effective teamwork.
  • Mentor and guide the bakery team, promoting collaboration, performance improvement, and a positive workplace culture that fosters employee engagement and retention.
  • Oversee and manage the production schedule in coordination with the Bakery Manager to meet sales and operational targets, analyzing data to inform decisions and optimize outcomes.
  • Maintain and update recipes, SOPs, and quality standards, ensuring compliance with industry regulations and company policies.
  • Manage ingredient inventory, perform regular stock checks, and place orders to ensure uninterrupted production, minimizing waste and optimizing resource allocation.
  • Monitor product costing and pricing, ensuring all items meet the required cost-to-price mark-up standards, identifying opportunities for improvement and implementing changes as needed.
  • Propose and introduce new or popular bakery products by conducting trials and obtaining management approval, staying ahead of customer trends and preferences.
  • Ensure the bakery team adheres to company policies, hygiene standards, and operational procedures, maintaining a safe and healthy work environment.
  • Collaborate with Directors on product innovation, process improvements, and business strategy alignment, driving growth and profitability through data-driven decision making.
  • Promote resource efficiency and waste reduction in production, continuously seeking ways to improve processes and reduce costs.

Requirements

  • Proven experience as a Head Baker or Senior Baker in a commercial or retail bakery, with a strong track record of success and achievement.
  • Strong technical knowledge of baking techniques, dough preparation, and baking equipment, with the ability to train and mentor others.
  • Excellent leadership, mentoring, and communication skills, with the ability to inspire and motivate team members.
  • Solid understanding of product costing, pricing strategy, and inventory control, with the ability to analyze data and make informed decisions.
  • Ability to manage staff performance and enforce policies when necessary, maintaining a fair and consistent approach.
  • Creativity in new product development, with attention to customer trends and preferences, staying ahead of the competition.
  • Well-organized, reliable, and able to work under pressure in a fast-paced kitchen, prioritizing tasks and managing multiple responsibilities.
