Job Title: Senior Kitchen Supervisor

Job Description:
  • Develop and execute kitchen operations to ensure the highest level of quality, presentation, and safety standards.
  • Manage inventory levels, maintain cost control, and optimize food supplies to prevent unnecessary spoilage.
  • Lead by example and direct chefs in preparing, cooking, and presenting culinary dishes while enforcing strict health and hygiene standards.
  • Supervise and ensure proper storage of food items at the end of each shift.
  • Collaborate with the Sous Chef/Chef de Cuisine to plan menus, control inventory, schedule tasks, and order kitchen supplies.
  • Organize and set up satellite kitchens efficiently to increase speed and maximize productivity.
  • Ensure that operating and kitchen equipment is well maintained to minimize breakage.
  • Carry out orders handed down by the Sous Chef and Chef de Cuisine.
  • Delegate duties to chefs working under their supervision.
  • Work closely with the Sous Chef to ensure a smooth-running kitchen operation.
  • Develop and manage market lists on a daily basis, listing all produce to be purchased.
  • Report any accidents or incidents immediately to the Sous Chef.
  • Attend daily briefings and meetings to ensure seamless operation.
  • Participate in recruiting, hiring, training, and evaluating employees under the supervision of the Sous Chef/Chef de Cuisine.
  • Provide additional training for culinary employees in areas and skills necessary for performing their functions.
  • Perform other tasks or projects assigned by hotel management or superiors as needed.
Required Skills and Qualifications:
  • At least 2 years of experience as a Senior Kitchen Supervisor in the hospitality industry.
  • Knowledge of specialty areas and culinary functions in general.
  • Understanding of HACCP protocols.
  • Proven track record of cost control, including food, equipment, labor, and waste management to meet food quality goals and financial objectives.
  • Demonstrate a passion for menu planning and leadership.
