Job Scope

The ideal candidate will support the Chef de Cuisine and Sous Chef in running daily kitchen operations, ensuring seamless execution of food production and presentation. This role involves training and mentoring Chef de Partie and Commis to maintain high kitchen standards and hygiene practices.

Key Responsibilities

  • Manage daily mise en place production, including stock management and food ordering.
  • Develop and implement recipes, ensuring consistency and quality in food presentation.
  • Train and coach culinary staff on food safety, hygiene, and kitchen equipment usage.
  • Collaborate with the culinary team to maintain high standards of food quality and presentation.
  • Ensure compliance with food safety and hygiene policies, as well as company regulations.
  • Assist in the development and implementation of kitchen procedures and protocols.
  • Provide guidance and support to junior staff members in their job functions and on-the-job training.
  • Estimate food consumption and requisition raw materials to minimize waste and spoilage.
  • Contribute to a positive and productive work environment, fostering a culture of teamwork and excellence.

Requirements

  • Certification in Culinary Arts.
  • Minimum 5 years of supervisory experience in a 4-5 star hotel or quality restaurant.
  • Excellent logistical, culinary, and leadership skills.
  • Ability to work effectively in a fast-paced kitchen environment.
  • Willingness to work flexible hours, including shifts and weekends.
