Job Title:

A Dim Sum Specialist is required to join our culinary team.

Job Description:

  • Assist the Head Chef in preparing and cooking high-quality dim sum items, including dumplings, buns, rolls, pastries, and other specialties according to recipes and standards.
  • Support mise en place work, such as chopping, marinating, measuring, and portioning ingredients.
  • Ensure consistency in portioning, flavor, and presentation of all dishes.

Roles and Responsibilities:

    • Prepare and cook dim sum items according to recipes and standards.
    • Support mise en place work, such as chopping, marinating, measuring, and portioning ingredients.
    • Ensure consistency in portioning, flavor, and presentation of all dishes.
  2. Cooking & Steaming

    • Operate dim sum equipment, including steamers, fryers, ovens, and grills, safely and effectively.
    • Monitor cooking times and temperatures to maintain quality.
    • Prepare sauces, dips, and accompaniments.
  3. Quality Control

    • Inspect ingredients for freshness and quality before use.
    • Follow hygiene and food safety standards strictly, adhering to guidelines from relevant authorities.
    • Assist in plating and presentation to align with high dining standards.
  4. Team Collaboration

    • Work closely with the Head Chef and Assistant Chef to execute daily production schedules.
    • Communicate effectively with service staff to ensure smooth delivery.
  5. General Kitchen Duties

    • Keep workstations, tools, and equipment clean and organized.
    • Follow opening and closing procedures for the dim sum section.
    • Adhere to all health, safety, and sanitation regulations.

Requirements:

  • 5-6 years of experience in a fine dining and high-volume restaurant environment.
  • Strong dim sum making techniques, including steaming, frying, baking, wrapping, and folding.
  • Good knife skills and ingredient knowledge.
  • Ability to multitask and work under pressure during peak hours.
