Roles & Responsibilities

Responsibilities

  • Oversee the preparation and execution of dishes, especially those utilizing the Tandoor, ensuring consistency, taste, and presentation meet fine dining standards.
  • Assist the Head Chef in managing kitchen operations, inventory control, staff supervision, and hygiene compliance.
  • Lead and train junior chefs and kitchen team members in Tandoor techniques, cooking methods, and service standards.
  • Monitor food quality during preparation and service to uphold culinary excellence.
  • Ensure adherence to all food safety and hygiene standards in accordance with Singapore Food Agency (SFA) regulations.
  • Participate in menu development, bringing creativity and depth of flavour through mastery of traditional and modern Tandoor applications.
  • Collaborate closely with front-of-house and back-of-house teams to ensure smooth kitchen flow and timely service.
  • Maintain kitchen equipment, particularly the Tandoor oven, ensuring it is operated and maintained safely and effectively.

Requirements

  • Minimum 5 years of professional kitchen experience, with at least 2 years in a Sous Chef role in a fine dining setting.
  • Proven expertise in Tandoor cooking, including handling marination, skewering, temperature control, and open fire grilling.
  • Strong knowledge of traditional and modern culinary techniques and food presentation styles.
  • Excellent team leadership, communication, and organizational skills.
  • Ability to thrive under pressure in a fast-paced and disciplined kitchen environment.
  • Formal culinary training or certification preferred.
