Roles & Responsibilities

Responsibilities:

Food Preparation & Quality Control:

  • Ensure that all food prepared in the kitchen complies with halal certification standards, particularly for Muslim guests and events.
  • Assist in designing, preparing, and executing menus for a variety of events, ranging from large banquets to small corporate meetings.
  • Supervise food preparation and cooking processes to maintain consistency and uphold high standards of presentation and flavor.
  • Collaborate with the Executive Chef on menu development, recipe creation, and culinary innovations tailored to the diverse clientele.

Event Coordination & Execution:

  • Work alongside the banquet and event teams to grasp specific event needs and adjust food production schedules accordingly.
  • Oversee the kitchen team during events to ensure seamless operations, timely food service, and quality control, especially during peak periods.
  • Partner closely with catering teams to guarantee strict adherence to halal requirements during MICE events.

Team Leadership & Development:

  • Assist in managing, mentoring, and training junior chefs and kitchen staff, ensuring they are well-versed in halal food preparation standards and hygiene practices.
  • Ensure the kitchen runs efficiently, with all staff performing at the highest standards.
  • Provide leadership in the Executive Chef's absence, managing kitchen staff and delegating tasks as necessary.

Hygiene & Compliance:

  • Ensure compliance with all food safety, hygiene, and halal certification regulations, including the proper handling, storing, and preparation of halal ingredients.
  • Monitor kitchen cleanliness to maintain the highest sanitation standards and ensure all team members adhere to hygiene protocols.
  • Conduct regular inspections of equipment, inventory, and workspaces to uphold a safe and clean work environment.

Inventory & Cost Management:

  • Assist in managing kitchen inventory to ensure all halal ingredients are adequately stocked, fresh, and readily available.
  • Monitor food costs and help manage the kitchen budget to ensure cost-effectiveness while maintaining quality.
  • Collaborate with suppliers to source high-quality halal-certified ingredients and maintain strong vendor relationships.

Requirements:

  • Diploma/Degree in Food & Beverage Management, or any equivalent professional qualifications
  • Brings along at least 4 years of experience as a chef in a halal-certified kitchen.
  • Prior experience in banquet and large-scale event catering would be an added advantaged
  • Able to adapt into a fast pace environment
  • Independent and a team player
