Role Description:
As an Assistant Chef at Shoukouwa, you will play a vital role in supporting the Executive Chef in maintaining our Two Michelin star standard. You will assist in managing the daily operations of the kitchen while upholding the authentic Japanese culinary traditions that define our restaurant. You will directly assist the Executive Chef during lunch and dinner service, as well as in food preparation and mise en place before service begins. The position requires ensuring consistency and quality of all dishes, and maintaining proper inventory management.
Key Responsibilities:
Culinary Excellence
· Assist the Executive Chef in preparing and cooking food during service
· Prepare all ingredients for the daily menu, including chopping vegetables, thawing frozen items, filleting fish, etc.
· Conduct detailed quality inspections of all dishes before service
· Oversee the timely rotation and proper handling of premium ingredients
· Ensure all dishes leaving the kitchen meet Shoukouwa's presentation standards
· Help maintain kitchen organization and cleanliness
Operational Management
· Maintain meticulous inventory records
· Monitor stock levels of specialty Japanese ingredients
· Ensure all food preparation follows established protocols
· Implement the restaurant's risk management and food safety programs
Additional Responsibilities
· Participate in menu development and seasonal adjustments
· Assist with special events and omakase dining experiences
· Perform other duties as assigned by the Executive Chef
Requirements:
· Minimum 5 years' experience in a Japanese fine dining establishment
· Strong knowledge of Japanese cuisine, ingredients, and techniques
· Japanese-speaking candidates are preferred.
· Excellent communication and leadership skills
· Ability to work under pressure in a fast-paced environment
· Strong organizational skills
