Roles & Responsibilities

**ROLE OVERVIEW**

The **Head Sommelier, Mandala Club** runs daily beverage operations and delivers exceptional customer service to meet/exceed the published budget. Whilst the role is fully operational, the individual is required to oversee the financial performance of the department.

A key function of the Head Sommelier is to develop a culture whereby all personnel is able to engage the Club Members confidently whilst guiding our patrons through the menu and offering the appropriate wine recommendation.

**KEY OBJECTIVES & DELIVERABLES**
- Run services with passion and drive performance excellence
- Implement service quality assurance
- Lead a world-class wine program to ensure the Group stays ahead of the game by offering outstanding products and experiences to our guests.
- Proactively respond to guests' feedback
- Devise quarterly ALC menus launches
- Develop a wine offering to promote sustainability across the Club
- Implement wine specials regularly
- Meet/Exceed beverage budget
- Manage procurement and stock par level procedures to drive cost control
- Plan and execute team development to foster a culture where the team are the to nurture the employees
- Promote an environment where menu knowledge is embedded in the team culture and fully embraced by the operational team at all levels of the hierarchy.
- Manage and implement business continuity plans.
- Manage compliance with food and beverage hygiene policies and procedures.

**THE RIGHT EXPERIENCE**
- 5+ years previous relevant experience required with proven food and beverage acumen
- Fluent English speaker
