The Chief Steward is responsible for all aspects of cleanliness, hygiene and sanitation of operating equipment at the front and back of restaurant, bar and for events. He oversees all cleaning activities, both in-house and outsourced to ensure efficiency and high standards of smooth operations in all restaurants, bars and events. Manages cleaning and resourcing expenses while maintaining consistent and high standards of hygiene and sanitation.

Primary Responsibilities:

- Ensure cleanliness and quality of all operating equipment in all restaurants, bars and event spaces are of a very high standard.
- Monitor and manage inventory and ensure breakages, pilferages etc are accounted for while maintaining a healthy par inventory level to support operations.
- Periodic review of operations flow to maximize productivity and for seamless operations.
- Recommend, review and monitor effectiveness and efficiency of outsourced contractor.
- Keep abreast and updated of latest trends and technology to enhance the cleaning and sanitation capability of the stewarding function.
- Work close with Purchasing and recommend fit for purpose cleaning equipment and cleaning products. Monitor use and effectiveness of equipment and cleaning products for enhance performance and/or solutioning.
- Work closely with Hygiene Manager to conduct regular audits to ensure attainment and/or maintenance of sanitation standards by private certification bodies e.g. HACCP or government regulatory requirements. Ensure all standards are adhered to at all times.
- Identify training needs of Associates and conduct briefing and/or training to equip them with necessary skills to perform their duties effectively.
- Schedule rosters for all associates in the Stewarding Department and ensure that manpower is used efficiently.
- Supervise and coach associates and equip them with the necessary skills to complete the required tasks based on the set standards.
