役職概要

特別食や代用品を用意する。オーブン、ブロイラー、グリル、ロースターの温度を調節する。冷凍庫から食品を取り出し、冷蔵庫で解凍する。適切な分量、盛り付けをする。食品記録を管理する。調理された食品の質と量を監視する。繁忙期に必要な支援を伝える。余った食材をシェフに伝え、日替わりメニューに使用する。スペシャルメニューや品切れのメニューを飲食サービススタッフに伝える。食材の品質を保証する。レシピ、品質基準、プレゼンテーション基準、調理チェックリストに従って調理を行う。コールドフードを準備する。
