**JOB SUMMARY**

Under the guidance and supervision of Assistant Chief Steward and Steward Supervisors. Responsible for cleaning and maintaining the food and beverage areas (including kitchen areas), materials and equipment on a daily basis.

**DUTIES AND RESPONSIBILITIES**
- Wash and clean all used pots and pans and other kitchen utensil hygienically.
- Load dirty/ soil China, Glass, Silver & etc into the dish washing machine, operate the machine accordingly to the Standard & Procedures, and remove cleaned wares from machine and stack them in proper order.
- Clean the kitchen area by sweeping, mopping, washing and keeps these areas clean at all times.
- Maintain the individually issued cleaning supplies from Stewarding Store i.e. Chemicals, mops, brooms, plastic bags, pads and etc.
- Clean and polish or burnish operating equipment before and after use or whenever necessary.
- Soaking of China, Glass, Silver in recommended chemical.
- Consult and follow up the special cleaning schedule.
- Setting up and clearing this buffet chafing dishes according to instruction and standard procedures.
- Re-stacking of operating equipment in proper places after use and preparing for next use.
- Ensure that the assigned areas are clean and tidy before closing off duty.
- Perform duties common to all rank and file and non supervisory personnel and other duties as may be assigned.
- Ensure that all garbage/ trashes empty boxes are clearing from every kitchen as per schedule time chart.
- Ensure all the sanitation solution is in place in every pot and dishwashing station.
- Assist/ help fellow colleagues in their task.
- Rest and set crockery properly in racks to avoid chips and cracks.
- Stack dishes accordingly to the type for easy reference and stacking on trolley.
- Place chips or cracks China, Glass and etc aside immediately and inform supervisor.
- Maintain the cleanliness of dish machine / pot machine and entire kitchen areas.
- Ensure the dishwashing machine temperature is set and maintained as follows:

- Wash sink at 150 degree F - 160 degree F
- Rinse sink at 170 degree F - 180 degree F
- Final rinse at 180 degree F

20. 3 pot washing sink temperature is set as follows:

- Wash sink at 120 degree F
- Rinse sink at 110 degree F
- Sanitiser Sink at 120 degree F

21. Microkleane (sanitiser solution is set as follows 12.5 and 25 ppm in strength is to be available at all work 22. stations.

23. To undertake any F&B assignment given by Supervisor or Assistant Chief Steward.

24. Any other duties as may be assigned from time to time.

**JOB REQUIREMENTS**
- An energetic and positive approach to getting the job done in a fast-paced environment
- Ability to work under pressure in a busy environment
- Attention to detail
- Good communication skills and the ability to follow directions
- Flexibility to work a rotating roster including weekends and public holidays
- Availability to work increased work hours during busy periods
- Previous experience in a hotel would be advantageous
