Food Technologist/ Food Innovation Specialist/ Flavourist (Savoury)

We are seeking a creative and experienced Savour Flavourist with expertise in South East Asian flavours to join our dynamic team. The ideal candidate will have a deep understanding of traditional and contemporary taste profiles from the region (e.g., Thai, Vietnamese, Malaysian, Indonesian) and the ability to develop innovative, authentic, and market-leading savoury flavour solutions for food & beverage applications.

Job Description

• Flavour Development:
  
  Create, modify, and optimize savoury flavour systems inspired by South East Asian cuisine (e.g., umami-rich notes, herbal blends, fermented profiles, spicy accents).  
  
  Work with ingredients like lemongrass, galangal, fish sauce, shrimp paste, tamarind, coconut, kaffir lime, and regional chilies.  
  
  Develop both natural and artificial flavour solutions for snacks, sauces, seasonings, instant noodles, ready meals, and other applications.
• Market & Trend Awareness:  
  
  Stay updated on South East Asian culinary trends, consumer preferences, and regional authenticity demands.  
  
  Collaborate with marketing and sales teams to align flavours with market needs.
• Technical Expertise:
  
  Conduct bench-top trials, stability testing, and sensory evaluations.  
  
  Ensure compliance with regulatory standards (e.g., FDA, FEMA, Halal, local regulations).  
  
  Troubleshoot flavour interactions in finished products (e.g., masking off-notes, heat stability).
• Collaboration & Innovation:  
  
  Work with cross-functional teams (applications, procurement, QC) to scale up successful flavours.  
  
  Support customer projects with tailored solutions and rapid prototyping.

Requirement

• Bachelor's/Master's in Food Science, Chemistry, or related field. Flavourist certification (e.g., IFT, SOCFA) is a plus.
• 5 years in savoury flavour creation, with a focus on South East Asian profiles.
• Proficiency in GC/MS, HPLC, sensory analysis, and flavour chemistry.
• Deep familiarity with South East Asian ingredients, cooking techniques, and regional taste preferences.
