Job Summary
Key Responsibilities
Baking & Production
- Prepare, mix, shape, proof, and bake a variety of artisanal breads, pastries, and desserts using traditional and innovative methods.
- Follow and refine recipes to maintain BakeHaus’s high-quality standards.
- Manage fermentation processes for sourdough, levains, and other naturally leavened products.
- Operate and maintain bakery equipment (mixers, ovens, proofers, etc.) safely and efficiently.
- Monitor baking times and temperatures to ensure product consistency.
Quality Control & Innovation
- Conduct regular quality checks on ingredients and finished products.
- Troubleshoot baking issues (e.g., underproofing, oven spring, scoring) and adjust techniques as needed.
- Collaborate with the Head Baker to develop new seasonal and signature products.
- Maintain strict adherence to food safety and sanitation standards (HACCP, local health codes).
Leadership & Training
- Supervise and train junior bakers and apprentices in proper techniques, efficiency, and craftsmanship.
- Assist in scheduling and delegating tasks to meet daily production goals.
- Foster a positive, collaborative, and disciplined work environment.
Operations & Inventory
- Assist in inventory management, including ordering ingredients and supplies.
- Maintain a clean, organized, and efficient workspace.
- Participate in waste reduction and sustainability initiatives.
Qualifications & Skills
- Experience: Minimum 5+ years in an artisanal bakery or high-volume scratch bakery.
- Expertise: Mastery of sourdough, laminated doughs, and European-style breads.
- Technical Skills: Strong knowledge of baker’s percentages, fermentation, and baking science.
- Physical Stamina: Ability to lift 25kg, stand for long hours, and work shifts.
- Leadership: Prior experience training or supervising a team.
- Creativity: Passion for developing new recipes and improving techniques.
- Certifications:Food handler’s permit required; formal baking/pastry training is a plus.
