
Assistant Chef

**Responsibilities**:
- Work with the kitchen team to produce food to a high standard on a daily basis
- Responsible for the daily paperwork, such as ordering, etc.
- Ensure that cleaning schedule is adhered to
- Assist the Head Chef with menu planning
- Food costing and staff resources management to achieve targeted budgets
- To report and where possible take action about customers complaints and compliments
- Ensure that kitchen stores and other potential areas of loss are secured at all times
- To undertake project work & training to develop skills in food production, management & enhancing customer service
- Responsible for compliance and adherence to all health, safety and food hygiene legislation
- Responsible for reporting, management and taking necessary action on non-compliance to statutory regulations and irregularities.
- To cover all head Chef duties in his absence
**Requirements**:
- At least 5 years of proven experience with Japanese cuisine in a related role
- Exceptional proven ability in kitchen management, able to work well under pressure in a fast-paced environment
- Well versed in beverage preparation for a Japanese Fine Dining Restaurant
- Outstanding communication and leadership skills Up-to-date with culinary trends and optimised kitchen processes
- Good understanding of budgetary control in a Fine Dining Restaurant
- Creative and enthusiastic about good food and its presentation
- Strong leadership skills to lead, manage and motivate staff.
- Good understanding of F&B technology (i.e. MS Office, restaurant management software, POS, etc.)
