Our bar programmes are as critical to the guest experience as our culinary programmes—this role demands a passion for influencing indelible dining experiences as the maestro behind the bar.

You'll be in charge of:

- Leading the day-to-day bar operations
- Ensuring appropriate handling of all equipment and supplies within his/her area
- Assisting the managers in the daily beverage operations and ensuring the quality and consistency of all products meet desired standards
- Managing the beverage stocks and inventories
- Participating and managing assigned sections to provide a beverage experience for guests
- Train and supervise bar staff, ensuring they are knowledgeable about products, policies, and procedures
- Continuously evaluate and improve the bar's offerings, including menu items, promotions, and events
- A comprehensive understanding of bar financials, including cost of goods sold, profit margins, analysis of sales mix, foundational menu engineering principles, and proficiency in stocktaking procedures, is imperative.
- The ability to evaluate and enhance current workflows to optimize productivity in a high-volume setting is essential.
- A keen eye for detail is crucial for maintaining consistency within our beverage program.
- Proficiency in analyzing both current and historical sales data to identify opportunities for increased profitability without sacrificing quality is highly valued.
- Extensive knowledge of international cocktails is necessary to develop a contemporary beverage program that remains relevant over time.
- Comfort with creating and managing spreadsheets, generating monthly reports, and conducting ad hoc analyses of beverage-related data to ensure departmental adherence to budgetary constraints and profit margins is required.
