The Distillery Trainee has an exciting opportunity to learn under our master brewer to brew and distil premium Whiskies and Gins With Singapore’s first underground whisky cellar and a brand new 500L copper whisky still, Hidden Hills is poised to be the next premium spirit brand in Asia.

Trainees are given high levels of autonomy to test quirky ingredients and methods and be taught to judge Whiskies and Gins in support of creating his/her unique spirit.

Distillery Trainees would be exposed to sales, marketing and quality assurance. Once trainees are experienced, we will promote our spirits to local or even foreign businesses when we attend overseas spirits conventions. Business development exposure are key makers of great distillers.

Trainee’s progression to Junior Distiller occurs after 6 months or earlier depending on progress. If aptitude for the spirit industry is observed, trainees can be groomed to be key management personnel.

This role involves a mixture of office duties and hands-on tasks on the production line and storehouse. It is a challenging role that is both rewarding and exciting.

**Distillery Trainee Responsibilities**

Key responsibilities include:

- **Production and Recipe Development**:
Trainee will learn the science and mechanisms of brewing and distilling from our master brewer. Trainees will then be involved with daily brewing and distilling, following production schedules. Recipe development remains the key challenge which trainees embark on to create new spirits. Have fun with our spirits
- **Manage distillery equipment**

Trainees will ensure that brewing and distillery equipment is used effectively and maintained correctly.
- **Produce regulatory documents to submit to eCustoms and other bodies**

Trainee will learn to maintain documentation with Singapore Customs, required for the distillery to keep running.
- **Administration tasks**

Trainee will record data about the production process and warehousing of spirits. This data is shared with senior management.
- **Help to market the distillery and improve its profile**

Trainee will learn from upper management to develop methods to market the distillery. Once the distiller is more experienced, he/she will support marketing efforts by engaging customers and promote the distillery at events.

**Education**

Distillery trainees should have a bachelor's degree in:

- Food science/technology
- Life sciences
- Chemistry
- Chemical engineering

**Work Experience**
- Prior experience in alcohol production is not required
- Knowledge and/or experience in fermentation and microbiology would impress greatly
- Experience in sensory analysis, wine/spirits tasting is good to have

**Key Skills and Mindset**
- Passion/interest in alcohol beverages is paramount
- Strong interpersonal skills
- Microsoft suite competencies
- Physically active to maintain equipment and inventory
