**Trainee Brewer - Work and Study Programme with LeVeL33**

Duration: 2-3 years, depending on your progress

With the close guidance of our Brewmaster, Gabriel Garcia, you will be acquiring practical experience and will develop the skills necessary to run a brewery.

Parallel to the hands-on training you will be studying for the Diploma in Brewing at the Institute of Brewing and Distilling, an internationally recognised academy. You will be taught in-depth brewing science, covering all aspects of the production process in a brewery. LeVeL33 offers full sponsorship for the IBD Diploma in Brewing examinations.

The training at the brewery includes, but not limited to:

- Raw materials handling and storage
- Learning objectives: _select and prepare brewing ingredients to get the best results. Proper storage techniques.
- Mashing techniques and operation of our semi-automatic 10hl brewhouse
- Learning objectives: _get familiar with the different malts and its production process, recipe development, brewhouse operation and troubleshooting.
- Fermentation and maturation
- Learning objectives: _understand how different parameters influence the biological processes during the fermentation and maturation. Beer sampling and testing.
- Packaging (kegs, cans, and bottles)
- Learning objectives: _understand the principles and basic physics laws used to control the filling process. Cleaning, sanitation, and filling of kegs. Bottles and cans filling. Troubleshooting.
- Tap maintenance and proper beer service
- Learning objectives: _cleaning and maintenance of tap and dispensing lines to assure freshness of the beers. Pour the perfect pint. Troubleshooting.
- Organoleptic evaluation
- Learning objectives: _use your senses to evaluate the beers, visual, aroma, flavor, mouthfeel, etc. Recognition of key aromas, off-flavours recognition. Acquire and use correct vocabulary when describing a beer.
- Dealing with Singapore Customs
- Learning objectives: _know and understand Singapore Customs regulations and obligations for microbreweries. Register beer lots using eCustoms portal.
- Production planning
- Learning objectives: _to schedule the production making sure the supply of any beer does not get interrupted.
- Equipment maintenance
- Learning objective: _to perform brewing equipment maintenance and to recognise if equipment is not working properly.
- Share your knowledge
- Learning objectives: _Share your knowledge to others by conducting internal and external brewery tours.
