**The Sushi Chef will be responsible for**:
- Leading the planning, creation, and experimentation of new sushi and sashimi menu items and work closely with the team to design an effective, high-quality menu at a fair price for premium izakaya setting.
- Train and monitor the preparation and execution of the sushi and sashimi menu/recipe for all kitchen staff.
- Make recommendations for seasonal purchases of Japan-related ingredients, and establish their potential viability as a product to be sold within Iki Concepts’ premises.
- Assist to create and maintain procedures that will assure food quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well as foster an awareness of the importance of food preparation and quality.
- Actively participate in achieving sales and profitability targets with the team.
- Responsible for producing the relevant recipes, costings, and continuous updates of all costing sheets for food. This includes executing on and maintaining an inventory of products used by their section of the kitchen.
- Work with the marketing, kitchen, and service teams on marketing initiatives and events from the planning to execution phases.
- Ensure a clean, neat, tidy, and odor-free environment prior to guest arrival daily and that the space always adheres to all food safety and health regulations.
- To ensure all equipment is kept in perfect working condition and report any deficiencies
- Maintain and improve kitchen standard operations procedures both in execution as well as in written format.
**Requirements**:
- Over 5 years of relevant experience in a Japanese sushi and sashimi restaurant.
- Able to create dining menus and prepare different types of sushi and sashimi
- Full ability to prepare fresh, whole seafood for use in sushi, sashimi, and other cooking methods.
- Excellent knowledge of Japanese cuisines, their preparation, and service.
- Aware of the latest culinary concepts in a broad range of cuisines.
- Excellent communication and leadership skills.
- Well-groomed, professional appearance, and excellent personal hygiene.
**Job Types**: Full-time, Permanent
**Salary**: $3,200.00 - $4,500.00 per month
