We are seeking an experienced and talented Banquet Sous Chef to join our culinary team. The Banquet Sous Chef will work closely with the Director of Culinary to maintain the highest standards of food quality, presentation, and kitchen operations of our Resort. Key Responsibilities The incumbent will assist the Director of Culinary with all aspects of the kitchen's operations, ensuring that all hygiene, sanitary, and safety standards are strictly adhered to. Assist in developing culinary concepts, including planning the menu and developing recipes. Maintain inventory levels, kitchen equipment, and control food costs. Research and prepare new products for meal-dining or banquet operations and stay abreast of market trends, following up on the creation of dishes for new menu cards, buffets, cocktail special events, etc. Ensure sanitation and food standards are fully achieved. Develop and mentor kitchen staff, ensuring adherence to food safety standards, recipes, and related SOPs while fostering a positive, inclusive culture that promotes collaboration and teamwork. Job Requirements Diploma or Certification in Culinary Arts or a similar professional qualification. 4 to 6 years of culinary experience in a property of similar standing, with a holistic and well-developed skill set and diverse culinary background. Complete knowledge of statutory regulations and requirements in food handling, including full knowledge of food safety, hygiene, and related practices. Able to work independently while displaying strong leadership qualities to guide kitchen personnel.
