This is an exciting opportunity to join our culinary team as a 2nd chef. We are seeking a highly skilled and experienced professional to lead our kitchen and deliver exceptional results.

About the Job

We are looking for a 2nd chef with strong culinary skills, leadership abilities, and attention to detail to deliver delicious and authentic Cantonese-style barbecue dishes.

The successful candidate will be responsible for preparing and cooking Cantonese-style barbecue and roast meats, ensuring consistent quality and presentation of dishes, and maintaining a clean and organized kitchen environment.

The role requires excellent communication and teamwork skills, as well as the ability to work in a fast-paced environment with high temperatures and humidity.

Key Responsibilities
  • Prepare and cook Cantonese-style barbecue and roast meats, such as char siu, siu yok, and roast goose.
  • Ensure consistent quality and presentation of dishes.
  • Maintain a clean and organized kitchen environment.
  • Select, trim, and marinate meats according to recipe requirements.
  • Spear skewer and hang meats for roasting or barbecuing.
  • Master various cooking techniques, such as roasting, grilling, and steaming.

Requirements
  • 10+ years of experience in advanced cooking techniques, including roasting, grilling, and steaming.
  • Knowledge of Cantonese cuisine and barbecue cooking.
  • Mentoring and training a kitchen team including junior chefs.
  • Ensuring food quality and presentation meet high standards.
  • Ability to lift 25 kg (55 lbs) and stand for long periods.
  • Maintaining kitchen hygiene and safety.
  • Work in a fast-paced environment with high temperatures and humidity.
  • Collaborating with restaurant management on healthy menu planning, inventory, and supply chain management.
  • Staying up-to-date with culinary trends and techniques to continuously improve skills and knowledge.
