Singapore's leading restaurant and nightlife group is looking for a Head Mixologist/Beverage Director to join their team.

This role is ideal for someone seasoned and dynamic, with the versatility to lead and operate a large-scale, multi-faceted space that includes a fine dining restaurant, upscale cocktail bar, and nightlife venue.

The individual will work closely with the culinary team to create pairings that enhance the overall dining experience.

The key responsibilities of this role include:

  1. Creating a dynamic and diverse cocktail and beverage menu for 4 individual concepts that reflect current industry trends, seasonal ingredients, and the unique identity of each venue;
  2. Developing signature cocktails that are creative and flavourful;
  3. Overseeing and managing a robust, well-rounded beverage program that includes coffees, teas, spirit-free beverages, and other specialties, while considering varieties and guest preferences;
  4. Continuously exploring new ingredients, techniques, and concepts to keep the beverage program fresh and enticing;
  5. Collaborating with the culinary team to create pairings that enhance the overall dining experience;
  6. Continuously working towards mastery of mixology techniques, presentation, and creation;
  7. Organising and participating in guest shifts, in venue as well as off-site, with industry experts and leaders, facilitating collaborative experiences that showcase talented individuals whilst introducing unique offerings to guests;
  8. Ensuring controls are in place and all cocktails meet high standards of quality and consistency;
  9. Conducting regular tastings and trainings for the beverage team to maintain and uplift skill levels;
  10. Monitoring inventory, analysing financials, and working with the finance team to optimise costs and maximise profitability;
  11. Leading and inspiring a beverage team by setting a positive example and fostering a collaborative, supportive, and productive work environment;
  12. Working bar shifts to engage with guests, stay in touch with guest preferences, and build a following;
  13. Acting as brand ambassador, representing and promoting the venues and group;
  14. Leading the recruitment of the beverage team, attracting top talent and building a high performing team;
  15. Establishing and maintaining strong relationships with suppliers and vendors;
  16. Negotiating favourable pricing, terms, and exclusives to maximise profitability;
  17. Proactively seeking solutions and ways to improve the team and the business.
