Job Title: Master Baker Leader

We are seeking a highly skilled and experienced leader to join our team in managing the entire production process.

The ideal candidate will be responsible for overseeing the entire operation, ensuring that all products meet our high standards of quality and safety.

  • Kitchen Roles:
  • Topping Section: Manage topping preparation according to SOP, oversee ingredients and fillings for all bun type products, ensure knowledge of all products and their ingredients.
  • Table Section: Equip staff with knowledge on using the right and required ingredients per product, ensure correct ingredient usage per product at the correct weight per ingredient, supervise sweet bun, Danish, Euro, Toast shaping, perform filling for sweet breads according to product.
  • Oven Section: Ensure accurate temperature and time setting per product being baked, equip staff with proper knowledge for each product before baking, responsible to ensure all bread types (sweet bread, Danish, Euro, Toast) be baked according to standard.
  • General Roles:
  • Maintain clean, tidy and hygienic station and overall kitchen environment, utilize appropriate tools and equipment for the task.
  • Able to adapt and perform various roles, conducting quality control and rejecting inferior products.
  • Able to identify and troubleshoot inferior products and maintain good quality throughout shift.
  • Organize the kitchen area, floor and preparation areas are neat, ensure equipment is in good working condition.
  • Organize repair and routine maintenance of production equipment condition and cleanliness.
  • Ensure hot bread availability at all times and minimal excess products held or run out.
  • Assist in recruiting new staff and conducting interviews.
  • Responsible for outlet's Profit & Loss (P&L).
  • Conduct staff performance appraisal.
  • Liaise with external vendors such as cleaner, pest control etc.
  • In charge of entire Wu Pao Chun brand product and ensure technical training is conducted in outlet.
  • New & Campaign launch product training for all outlet bakers.
  • Develop new products.
  • Ensure production baker health and safety.
