Job Scope

As a key member of the Marina Bay Sands culinary team, the Chef de Partie plays a vital role in ensuring the highest standards of food preparation and presentation. Working closely with the Sous Chef and Head Chef, this individual is responsible for managing a section of the kitchen, including the preparation and cooking of food to restaurant-specific standards.

Key Responsibilities

  • Manage a section of the kitchen with the assistance of Commis Chefs
  • Prepare and cook food to the highest standards, adhering to restaurant specifications
  • Develop and supervise Commis Chefs on section, ensuring they meet the required standards
  • Awareness and implementation of waste controls, section stock control, and rotation
  • Completion of the cleaning schedule for the kitchen, maintaining a clean and safe working environment
  • Understand the functional administration of the restaurant, including docket procedures, stations, table numbers, and food labeling
  • Detailed knowledge of the full menu, with the ability to give a detailed description of all dishes
  • Team working, with a focus on collaboration and communication with colleagues
  • Compliance with legal requirements under the H&S Act 1974 and food hygiene regulations
  • Adherence to all policies, procedures, standards, specifications, guidelines, and training programs
  • Reporting of maintenance issues to the relevant parties
  • All restaurant and menu standards adhered to at all times, with a focus on quality and consistency
  • Food produced to the highest standards, with minimal wastage and efficient stock usage
  • Ability to work on rotating shifts, weekends, and public holidays, with a well-groomed and professional appearance
  • Demonstrates a full understanding of their role and carries it out in line with their job description
  • Works effectively with the rest of the team, prioritizing tasks and demonstrating effective time management and coordination
  • Communicates clearly, professionally, and concisely, actively listening to others and giving consideration to their needs and opinions

Requirements

  • Diploma in Culinary Arts/Pastry
  • Minimum 5 years of experience in a full-fledged kitchen, with at least 2 years in a similar capacity
  • Possess food hygiene and safety certification
  • Able to work on rotating shifts, weekends, and public holidays
  • Possess a well-groomed, professional appearance
  • Demonstrates a full understanding of their role and carries it out in line with their job description
  • Works effectively with the rest of the team
  • Is able to prioritize tasks and demonstrate effective time management and coordinating, controlling, and managing different resources
  • Communicates clearly, professionally, and concisely while actively listening to others and giving consideration to their needs and opinions
