Viennoiserie Pastry Chef

We are seeking a skilled Viennoiserie Pastry Chef to join our Central Kitchen team. Our ideal candidate will have a passion for crafting artisanal French pastries and a commitment to delivering exceptional quality in a fast-paced production environment.

The successful candidate will be responsible for preparing a wide range of viennoiserie products, including croissants, pain au chocolat, and other laminated dough creations. They will also be required to execute precise dough lamination techniques to achieve consistency and quality across all pastries.

  • Production Excellence: Prepare high-quality viennoiserie products in a high-volume production environment.
  • Lamination Mastery: Execute precise dough lamination techniques to achieve consistency and quality across all pastries.
  • Recipe Adherence: Ensure strict compliance with standardized recipes and production processes.
  • Batch Scaling & Management: Accurately measure and manage batch sizes to meet daily and weekly distribution demands.
  • Quality Assurance: Conduct regular checks to ensure all products meet visual and taste standards.
  • Hygiene & Safety: Maintain the highest standards of cleanliness and food safety within the central kitchen.
  • Team Collaboration: Work closely with the central kitchen team to optimize workflow and achieve production goals efficiently.
  • Inventory Control: Monitor ingredient stock levels and coordinate replenishment with the procurement team.

Qualifications:

  • Diploma or certification in Patisserie, Bakery, or a related field.
  • Ability to thrive in a high-paced production environment with tight deadlines.
  • Strong organizational skills and attention to detail.
  • Familiarity with industrial baking equipment and processes is a plus.
  • Commitment to teamwork and continuous improvement.
